Do you think French bread is a bit difficult to make?
However, the ingredients are actually simple, and it's surprisingly difficult to make mistakes, so even beginners can bake it deliciously.
The recipe we're introducing today only requires flour, salt, yeast, and water - no special ingredients are required.
It would be ideal to use Risdol, a semi-strong bread flour, but you can also make it with strong flour without any problems.
What's more, Risdol is available at wholesale supermarkets, so it's surprisingly common.
Please come and experience the unique charms of handmade bread, such as it being cheaper than buying it at a store and being able to eat it fresh from the oven.
Ingredients (for 3 pieces)
・Risdor (strong flour is also OK) ... 370g
・Salt ... 7g
・Dry yeast ... 3g
・Water…260ml
How to make it
1. Knead the dough
1. Mix risdol, salt and dry yeast in a bowl.
2. Add the water and mix until the dough comes together and is smooth.
3. Transfer to a work surface and knead for another 15 minutes.
4. Roll the dough into a ball, place it back in the bowl and let it rise for the first time (about 1 hour, until doubled in size).
2. Preparation for the second fermentation
1. Dust a bread mat with flour and spread the dough into an oval shape.
2. Fold it into thirds → rotate it 90 degrees → fold it into thirds again.
3. Roll the dough into a ball, return it to the bowl and let it rise again until doubled in size.
3. Bench time
1. Divide the dough into 3 equal parts and lightly roll them into balls.
2. Cover with a bread mat and let rest for 15 minutes (bench time).
4. Molding
1. Roll out the dough into an oval shape and fold the long side in thirds, then fold it in half again.
2. Seal tightly with your fingers and roll to stretch it out to about 25cm.
3. Fold the bread mat in half to create dividers and arrange the dough on them.
4. Cover with a tightly wrung out cloth and let rise for about an hour.
5. Firing
1. Preheat oven to 300°C.
2. Place a baking sheet on top and arrange the dough on it.
3. Sprinkle flour on the surface and make cuts.
4. Spray with plenty of water using a spray bottle.
5. Reduce the temperature to 230℃ and bake for 25 to 30 minutes.
Completed!
The outside is crispy and fragrant, and the inside is fluffy.
