Introduction
When it comes to autumn flavors, saury comes to mind.
We tend to think of it as something that should be grilled, but in fact, steaming it in a steamer makes it plump and soft, and retains the delicious fat.
What's more, it's very easy, as all you have to do is arrange the ingredients and steam them.
The aroma of white wine, herb salt, and lemon gives the saury a slightly Western flavor.
This is a simple and elegant dish that is perfect for dinner on busy days.
Ingredients (for 2 people)
・Sanma (Pacific saury): 1 fish (remove head and innards, cut into 2 or 3 equal parts)
・Maitake mushrooms... 1/2 pack
・Enoki mushrooms... 1/3 bag (remove stems and break up)
・Onion ... 1/4 (thinly sliced)
・Herb salt... appropriate amount
・White wine ... 2 tablespoons
・Lemon juice ... 1 tablespoon
How to make it
1. Preparation Remove the internal organs of the pacific saury and cut it into pieces that will fit in the bamboo steamer. Sprinkle a little salt (not included in the recipe) on it and leave it for about 10 minutes, then wipe off the moisture.
2. Prepare the steamer: Line the steamer with parchment paper, spread the onions and maitake mushrooms, and then arrange the saury on top.
3. Sprinkle herb salt over the entire dish and drizzle with white wine and lemon juice.
4. Boil water in a steaming pot, place the steamer basket on top, and steam over medium heat for about 10 minutes.
5. Once steamed, serve directly on the table. Enjoy with the lemon aroma.
point
- Just cut the saury into pieces that will fit into the steamer.
- If you lay down a cooking sheet, the fish will not stick and cleanup will be easy.
Another great thing about this dish is that you can use leftover vegetables from your fridge. Broccoli and carrots are also delicious.
summary
Steamed saury is a gentle dish that is a little different from grilled fish.
The aroma of white wine and lemon spreads softly, and the fatty flesh is refreshing to eat.
This time it is seasoned in a Western style, but you can also enjoy it as a Japanese-style sake steamed dish by simply steaming it with sake and salt.
This is a dish that can only be made in a steamer, allowing you to enjoy the delicious flavors of autumn without any hassle.
