What is Escargot Butter? Easy French Garlic Butter Recipe

エスカルゴバターとは?フランス風にんにくバターの簡単レシピ

"Does escargot butter have escargot in it?"
I get asked that question a lot, but the truth is, it does not contain escargot (snails) .

This is the "herb garlic butter" that is served with escargot dishes . It is butter mixed with plenty of parsley, garlic, and shallots (onions), and is a classic flavor in French bistros .

In the original version, it is served on escargot and baked in the oven, but it is actually a versatile seasoning that can be used on seafood, meat, pasta, and bread . In this article, we will introduce a recipe for how to easily make escargot butter at home , as well as a beach-grilled version.


Ingredients (easy to make amount)

・200g unsalted butter (room temperature)

・Italian parsley...50g (regular parsley is fine too)

・Shallots...20g (or onion if you don't have them)

・Garlic…2 cloves

・Salt...a little

 


How to make it (with or without a food processor)

1.Chop the parsley, shallots and garlic into evenly sized pieces and blend all ingredients in a food processor .

→This method will result in a vibrant, beautiful green color .

2.If you don't have a food processor, finely chop the ingredients with a knife and mix with the softened unsalted butter .
→It may look a little coarse, but you can still enjoy the aroma and flavor.


3.Once mixed well, store in a storage container or wrap in plastic wrap and freeze .


Hard clams and grilled seafood arrangement

This time, we've topped readily available hard clams with escargot butter to create a beach-grilled style dish. The broth from the clams and the rich flavor of the herb butter go perfectly together! If you grill them slowly over a charcoal fire or grill, you can enjoy the appetizing aroma and flavor .


Other ways to use it:

・Mix with pasta for herb butter pasta

・Instant garlic toast on a baguette

・For finishing off sauteed chicken or white fish

・It's also delicious mixed with boiled potatoes or broccoli!
