Beaten eggs and Neapolitan pasta on a sizzling hot iron plate. This is a Showa-era feast.
The sweet and sour aroma of ketchup, the vibrant color of the red sausages, and the rich sauce that coats the thick pasta... one bite will fill you with a sense of nostalgia and satisfaction.
Neapolitan is a type of Western food that originated in Japan after the war, but the style of serving it on a hot plate is a staple, especially in Nagoya's coffee shop culture. The presentation of pouring an egg onto a hot hot plate and then topping it with Neapolitan is full of excitement in terms of the sight, sound, and aroma.
This time, we'll introduce a recipe that lets you easily recreate this "Teppan Napolitan" at home. The secret is thick pasta, a slowly sautéed ketchup sauce , and the fragrant finishing touches of butter and eggs . Add grated cheese and Tabasco to taste, and you'll be dining right at a coffee shop!
Ingredients (for 2 people)
・Pasta (thick/2.2mm in this case)...200g
・1/2 onion
・2 green peppers
・Red sausages...4-5 pieces
・Salad oil...1 tablespoon
・Butter...10g
・Eggs…2 pieces
・Salt and pepper...a little
A: Combined seasonings
・Ketchup...4 tablespoons
・Milk...3 tablespoons
・Medium-thick sauce...1 teaspoon
・Sugar...1 teaspoon
・Soy sauce...1 teaspoon
・Consommé (granules)...1 teaspoon
How to make it
1. Boil the pasta in plenty of salted water for a little longer than the package instructions suggest (we recommend boiling it until it's a little softer). Drain the water.
2. Cut the ingredients. Thinly slice the onion, thinly slice the bell pepper, and cut the red sausages diagonally. If you want to create a retro feel, you can't go wrong with the red sausages!
3. Mix all the ingredients in A to make the combined seasoning . The key is to use milk and sugar to mellow out the sourness of the ketchup.
4. Heat salad oil in a frying pan and fry the onions, peppers, and sausages over medium heat.
5. Add the seasonings. Once the ingredients are cooked, add the seasonings in A and stir-fry thoroughly. Stir-fry until the acidity of the ketchup evaporates, and the flavor will become much mellower. It's ready when the pungent smell is gone.
6. Add the pasta and butter. Add the boiled pasta and stir-fry until the sauce is evenly coated. Finally, add butter to add richness.
7. Finishing on the hot iron plate: Add oil (not included in the recipe) to a hot iron plate and pour in two beaten eggs. When the edges of the eggs begin to solidify, add a heaping pile of Neapolitan. The sound and aroma are just like in a coffee shop!
8. To finish, add grated cheese or Tabasco to taste.
The aroma of the hot iron plate and ketchup will surely warm your heart. Why not try recreating the taste of those old coffee shops at home?
