First of all, the "horse mackerel knife" is essential for filleting horse mackerel. Horse mackerel knives are shaped like deba knives, but the difference is in the thickness of the blade. Compared to regular deba knives, they are lighter, so you won't get tired even if you use them for a long time. They are easy to use even for beginners, so they are useful not only for horse mackerel but also for cooking other fish.

2. How to fillet horse mackerel

Below are the basic steps for filleting horse mackerel. Once you have mastered this, you will be able to enjoy horse mackerel as sashimi or grilled fish.

Step 1 : First, wash the horse mackerel with water and remove any dirt on the surface. Next, remove the guts from the tail, cut off the head, and remove the innards. At this time, lightly cut open the abdomen with a knife and remove the innards.

Step 2 : Insert the knife into the back of the horse mackerel and slowly cut open the flesh along the spine. After opening one side, do the same on the other side. Use the knife carefully, trying not to break the flesh as much as possible.

Step 3 : Once opened, remove the bones. Using a bone remover will help you remove even the smallest bones neatly.

3. Horse Mackerel Fried Recipe with Tartar Sauce

Once you've filleted the horse mackerel, the next step is to make the popular fried horse mackerel. The crispy batter and plump horse mackerel meat go perfectly together in this dish. Adding some homemade tartar sauce will further enhance the flavor.

material:

  • Horse mackerel (opened)
  • flour
  • Beaten egg
  • Breadcrumbs
  • Salt and pepper
  • Frying oil

Ingredients for tartar sauce:

  • 1 boiled egg (chopped)
  • Mayonnaise (4 tablespoons)
  • Pickles (chopped, 2 tablespoons)
  • Onion (chopped, 2 tsp)
  • 1 teaspoon lemon juice
  • Salt and pepper (to taste)

Instructions:

1.Seasoning : Sprinkle a light amount of salt and pepper on the opened horse mackerel to season it. This will bring out the umami flavor of the horse mackerel.

2.Coating : Coat the horse mackerel in flour, shake off any excess, dip in beaten egg and coat thoroughly in breadcrumbs.

3.Deep frying : Heat oil in a frying pan and deep fry the horse mackerel over medium heat (170-180℃). When one side is golden brown, flip it over and continue deep frying until both sides are crispy and golden brown.

4.Make the tartar sauce : Mix all the tartar sauce ingredients together. Adjust the amount of lemon juice and pickles to suit your taste for sourness and flavor.
